Yogurt is "known to decrease lactose intolerance," admits a researcher in the latest issue of 60 million consumers. How? 'Or' What ? We take stock.
In France, lactose intolerance officially affects between 5 and 10% of the population. Patient associations claim much higher figures.
Intolerants do not have enough lactase, an enzyme that can digest milk sugar called lactose. When they consume products that contain them, they are, depending on the level of intolerance, subject to abdominal pain, bloating, diarrhea and / or constipation, or even vomiting.
Yogurt bacteria "degrade 95% of lactose"
But in the face of lactose intolerance, not all dairy products are equal, as is the case with yoghurt. Asked by the magazine 60 million consumers* Philippe Langella, Director of research and laboratory on probiotics at the National Institute of Agricultural Research (INRA) explains the reason: this dairy product "is known to decrease lactose intolerance and therefore associated symptoms (...). Yogurt is a fermented product that contains two living bacteria. These bacteria proliferate in milk at the time of manufacture of yogurt and degrade 95% of lactose. They then remain active in the intestine and continue to degrade the lactose present.”
An affirmation supported in 2011 by the European Food Safety Authority of the European Union (Efsa).
